Details: What is EXAU olive oil? EXAU is an Italian olive oil brand founded by a husband and wife team. Their family has been producing oil for almost 100 years using a combination of old and new farming traditions! EXAU olive oil is made with estate-grown, hand-picked olives in Calabria, South Italy from trees ranging from 11 to 80+ years old. These trees sit on a cliff above the Ionian sea, where the sun rises over the crystal clear water and sets into the hills. The Ionian breeze and fruit trees on the property contribute to the complex flavor profiles of their signature medium-bodied fruit-forward yet herbaceous Calabrian oils.
Co-founder Giuseppe is a 3rd generation olive oil producer. In contrast, co-founder Skyler used to work in the wine industry and took many of the lessons learned there and applied them to EXAU's harvesting and milling strategy. Skyler and Giuseppe work harvest each fall and personally manage every step of the process.
EXAU follows 100% European Union organic agricultural practices and works with a chemist and agronomist who share their passion for organic farming. Year-round they test the soil, leaves, and oils to ensure their products are of the highest quality.
